Bulgur Wafer and Adjuncts for Fallout Shelter Rations - a Report of Research Conducted July 1964 - June 1965
註釋Vapors from rancidifying bulgur and from autoxidized methyl linoleate, a model compound, are being analyzed and identified by gas liquid chromatography and mass spectrometry. Thirty-one compounds have now been tentatively identified in studies on the model system. The presence of some of these compounds in vapors from rencid bulgur has been verified. We have made further study of gun-puffing and hot-air puff-drying as alternate means of preparing wheat ingredients for the wafer. Development of a jelly that sets with cold water essentially concludes development work on adjuncts. Long-term (five-year) storage studies of bulgur wafers and adjuncts are continuing. Taste panel evaluations to date indicate that shelf life of both types of products can be extended with nitrogen-packaging.
