註釋Abstract: The critical relationship between nutrition and health constitutes the focus of this text. Basic facts on nutrients, digestion and absorption, energy metabolism, and weight loss and gain are given. Strategies for choosing a good diet are explained, and nutrient needs throughout the life cycle are described. Aspects of nutrition relating to physical work and athletics are also examined. Additional topics include: food processing and food additives; vegetarian diets; contemporary nutrition issues; the world food crisis; and sources of reliable nutrition information. Consumers are urged to become critical users of nutrition information by learning the facts and developing criteria against which nutrition advice can be evaluated. Appendices include 1980 RDAs, height/weight tables, and nutrient analyses of common foods and fast foods. (nm).
