註釋In this adventure we are now embarking upon, I will try to convey my cookery knowledge and take you on a pleasant journey full of new flavours. However, as time is always of the essence, the basic pillars of this book will be ease, speed and economy in the recipes, avoiding complex, long and confused processes. Having said that, you will have to give it your all if you want to enjoy the cooking process as much as I've enjoyed writing and preparing each and every one of the recipes included here. Without formal cookery training, but imbued from an early age in the flavours and scents of the most delicious dishes of Mediterranean and South American cooking, I have developed a taste for fine dining and a diversity of ingredients.
