註釋Sugar has many functional properties in addition to its nutritive value. It can be produced either in the liquid or crystallized form for both domestic and industrial uses. This publication describes the sugar industry, with particular regard to the production of various categories of sugar and alcohol, processing and utilization of by-products, and the manufacture of pulp and paper. With the diminishing demand for and cost of sugar, diversification towards value-added products can offer opportunities for improving the economics of sugar production.
