註釋Abstract: This textbook describes the theories, principles, and practice of nutrition and diet therapy for the nursing student. This comprehensive work begins with nutrition as it relates to healthy people and includes exercise and other habits necessary to achieve optimal health. The principles of nutrition for people at the various stages of life from birth through old age are discussed. The latter portion of the text addresses the nutrition concerns of people who are ill or who have medical conditions that require modification of the diet. Topics include: recommended nutrient intakes, dietary guidelines, carbohydrates, fats, proteins, digestion and absorption, metabolism and energy balance, vitamins, nutrition during pregnancy, nutrition assessment and care plans, and modified diets for various illnesses and disorder. Appendices include: food composition table, vitamins/mineral supplements compared, and enteral formulas.
