註釋Abstract: It is important for doctors, nutritionists, and lay people alike to have an understanding of sound human nutrition information. With this in mind, the book has been divided into six parts, each dealing with a specific group of nutrition-related subjects. Diets and the physiological roles of the essential nutrients are considered in Part I. Part II is a description of the principal foods of man in terms of nutrients. The main concern of Part III is on the clinical features, pathology and treatment of primary nutritional diseases. A number of diseases are considered because of the dietary contributions to their onset or treatment in Part IV. Part V is a discussion of world public health and public health organizations. Diet and physiological status are the subjects of Part VI. Parts I and II contain many tables on the nutritive values of different foods, and Part III and IV have 20 recommended diets for treatment of various diseases. The appendices include a glossary of foods, diet sheets, oral or tube foods, and weights and measures.
