Lipases (glycerol ester hydrolases EC 3.1.1.3) are ubiquitous enzymes of considerable physiological significance and industrial potential. Lipases are unique enzymes in that they require interfacial activation for full catalytic performance (Sarda and Desnuelle, 1958; Brockman, 1984).
Lipases comprise a group of enzymes whose biological function is to catalyze the hydrolysis and synthesis of triacylglycerols, to yield glycerol and fatty acids.
