註釋Abstract: A source book on herbs and spices, organized into 3 major sections for homemakers and nutritionists, covers their use as home remedies (in treating various illnesses) and in cooking, and their chemical composition data. The section, which deals with the medical application of herbal spices, lists diseases and spices which may be useful in treating them and then lists spices and their applications for diseases. These herbal treatments are mentioned for educational purposes rather than the self-treatment of disease. The second section covers many of the food uses of each of the spices, including suggestions for specific dishes. The third section compiles available biochemical and nutritional data for each of the spices, covering specific chemical constituents and qualitative nutrient composition. Detailed guidance on how to collect, dry, and prepare herbs and spices is appended. (wz).
