This vademecum of Italian - more specifically Parmesan - cooking sets out to explore the infinite possibilities of a typical meal alla Parmigiana (Parmesan-style). The opening chapters provide an introduction to Italian gastronomic culture in general, focusing in particular on the typical cuisine that has made Parma so famous culinary-wise throughout the world. Each of the subsequent chapters is dedicated to a particular course, presenting an array of mouthwatering antipasti (starters), featuring the world-famous prosciutto di Parma and culatello di Zibello, tantalizing primi piatti including all-time favourites such as anolini in brodo, lasagne, cannelloni and other delicious pasta dishes and risottos (where the equally famous Parmigiano-Reggiano cheese is a mainstay), not to mention a varied range of meat, fish, egg and vegetable dishes to suit every palate. Of course, no Parmesan meal would be complete without its typical dolci (desserts), rounded off with a delightful home-made digestive (digestive liqueur). The authors Maria Cristina and Elisa have set themselves the mission of promoting their native Parmesan cooking outside the confines of Italy. Their culinary repertoire is based on approximately 200 authentic traditional recipes handed down by great-grandma Clotilde and grandmas Lina and Rina, all natives of the Parma area. With its colour photos, wealth of tips and suggestions, sections devoted to measurement equivalents, to a glossary of culinary terms, and to recipe indexes (both in Italian and English), Buon Appetito! sheds valuable light on an Italian regional cuisine which the authors hope will become a household word throughout the world.
