註釋Abstract: Recipes from 48 cookbooks are indexed 3 ways: by name, by principal ingredient, and by cooking style. Brief descriptions, when possible, are provided. A number of treatments are used in the main entry to indicate parenthetical information, pretreatment of food and variations of the recipe name. Selected entries were derived from cookbooks which are generally available and have been published since 1972. Large quantity recipes and illustrated cooking techniques are included. (kbc).
