The 19 chapters comprising the text material are arranged among 4 principal themes, covering nutrition principles (recommended nutrient intakes; nutritional assessments; food preferences; nutrient characteristics; population groups at risk); nutritional problems in industrialized nations (e.g.: problems created by affluence; diet and cancer; nutritional prevention of disease; drug-nutrient interactions); nutritional problems in developing nations (e.g.: protein-energy malnutrition; vitamin and mineral (including goitre) deficiency diseases; malnutrition and infection; and the public health aspects of food toxicology and enriched foods.
