Arranged alphabetically, more than 100 entries discuss important topics in human nutrition. The entries focus on those issues in nutrition and diet which most concern the public in the effort to lower the risk for certain diseases and to promote good health. The information presented not only discusses what constitutes good nutrition but also the reasons why specific recommendations are made. Explanations of the role of each vitamin, minearl, and amino acid in the body and the quantity required for good health are provided.
