Abstract: Because much of the information offered about nutrition is faddish, this encyclopedia was written to provide the consumer with factual information on how particular foods affect general health. The foods reviewed fall into three categories: those found as a major part of the Western diet, those found in small quantity, and those infrequently found but of interesting quality.
