Vegetarian Meals Served in Elementary Schools

There was no statistically significant difference overall between both schools and all grade levels of how many children chose the vegetarian entrée versus the non-vegetarian entrée (p values ranging from 0.0789 to 0.8875). Some subgroups, however, showed a significantly higher number of children who chose the non-vegetarian entrée. These subgroups included School X overall (p = 0.0024), the third (p = 0.0064), fourth, and fifth graders (p = 0.0034) at School X and the overall group of third graders including both schools (p = 0.0278). The results also showed an overall intake of 46.8% of the vegetarian entrée eaten. However, since usual intake of the students was not recorded for this study, a comparison could not be made. Lastly, the results showed a cost per serving (including food and lab=r costs) of $0.91 for the non-vegetarian entrée compared to $0.70 for the vegetarian entrée. Therefore, it could be cost effective for this school district to serve the vegetarian entrée.
