Results. There was no statistically significant difference overall between both schools and all grade levels of how many children chose the vegetarian entrée versus the non-vegetarian entrée (p values ranging from 0.0789 to 0.8875). Some subgroups, however, showed a significantly higher number of children who chose the non-vegetarian entrée. These subgroups included School X overall (p = 0.0024), the third (p = 0.0064), fourth, and fifth graders (p = 0.0034) at School X and the overall group of third graders including both schools (p = 0.0278). The results also showed an overall intake of 46.8% of the vegetarian entrée eaten. However, since usual intake of the students was not recorded for this study, a comparison could not be made. Lastly, the results showed a cost per serving (including food and lab=r costs) of $0.91 for the non-vegetarian entrée compared to $0.70 for the vegetarian entrée. Therefore, it could be cost effective for this school district to serve the vegetarian entrée.
